A COMPARISON OF SELECTED MILK INDICATORS IN ORGANIC HERDS WITH CONVENTIONAL HERD AS REFERENCE Organic Eprints

In a historical sense, current organic farming is an old-new alternative under changed world conditions. Organic dairying (O) is an alternative of friendly use of the environment in time of presupposed global climate changes. Potential impact of organic farming on raw cow-milk quality, composition and properties, as conpared to conventional milk production (C), were evaluatedin this paper on the basis of selectedm ilk indicators (MIs). Total solids, whey volume, pH of milk fermentation ability (FAM-pH), FAM streptococci, FAM noble lactic acid bacteria, I and Cu were higher in C milk (P<0.05). The alcohol stability (AS), titration acidity, curd firmness (CF), FAM titration acidity (FAM-T), Ca, P, Mg, K and Fe were higher in O milk (P<0.05)....

En stor undersøgelse har vi påvist, at indholdet af frie fedtsyrer (FFA) i økologisk mælk er markant lavere end i konventionel mælk. Årsagen til den bedre mælkekvalitet fra økologiske besætninger kan ikke pålægges malketeknikker, men formodes at skyldes fodringsstrategi eller management.

Es ist wissenschaftlich gut belegt: Weidehaltung und Fütterung mit frischem Grünfutter führen zu einer besseren Milchqualität. Milch aus dem Berggebiet mit Sömmerung auf Alpen ist besonders vorzüglich. Solche Milch enthält mehr gesundheitsfördernde Fettsäuren in günstigerer Zusammensetzung. Bereits wird diskutiert, wie sich die höhere Qualität preislich ausdrücken könnte.

The effect of cows' diets on milk composition is discussed, focusing on those components of particular interest for human health. First dietary sources of fatty acids and their digestion and metabolism are reviewed. Then feeding factors affecting milk fat content and fatty acid composition are discussed, with emphasis on those factors related to forage and fat supplements. The effects of diet on protein content and composition and milk content of minerals and vitamins are reviewed. Feeding strategies for improving the nutritional quality of milk are summarized.

Detailed milk fatty acid profiling of the Danish dairy cattle population Organic Eprints

The fatty acid (FA) composition of bovine milk may be related to human health and technological properties of dairy products. The FA composition can be altered both through management and breeding. Large scale FA profiling of the Danish dairy cattle population has now been implemented for more than a year. For the first time access to millions of FA observations across an entire dairy population enables in depth analysis of the factors affecting the FA profile of milk. This was the aim of this study. Man möchte der Vielfalt euterentzündungsfördernder Faktoren mit einem ganz einheitlichen Konzept besser Paroli bieten können. "5-4-7-4" heißt die Zauberzahl zur Mastitisrate in der Schweiz: Jede 5. Kuh hat während der Laktation eine klinische Euterentzündung; jede 4. Kuh leidet an mindestens einem Viertel an einer chronisch subklinischen Mastitis; jede 7. Kuh wird aufgrund einer unheilbaren Eutererkrankung ausgemerzt, und jede 4. abgelieferte Tankmilch weist einen erhöhten Gehalt an Staphyloccocus aureus auf.

Projektet SOBcows har i samarbejde med RYK gennem 16 måneder i 2015/16 analyseret for indholdet af 11 fedtsyrer/fedtsyregrupper i kontrolmælken fra alle ydelseskontrollerede køer i Danmark. Dataanalyser af godt 3,5 mio. mælkeprøver viser, at det er muligt at påvirke sammensætning af mælkefedtet gennem avl. En foreløbig beregning af arvbarheden hen over laktationen viser, at alle fedtsyrekategorier har en genetisk variation og enkeltfedtsyrerne har arvbarheder på højde med den samlede fedtydelse. Det betyder arvbarheder i intervallet 0,25-0,44 afhængig af race og paritet. Eine der bedeutendsten Erkrankungen in der Milchviehherde ist die Euterentzündung. Die Ursachen der Mastitis sind vielfältig. Daher muss diesem Krankheitskomplex ein ganzheitliches Konzept entgegengesetzt werden. Um von einer Euterentzündung sprechen zu können, müssen Erscheingungen wie Rötung, Schwellung, Schmerz, vermehrte Wärme oder Abweichungen im Aussehen oder der Zusammensetzung der Milch vorliegen. Proliferative effect of whey from cows’ milk varying in phyto-oestrogens in human breast and prostate cancer cells Organic Eprints

Intake of dietary phytoestrogens has received a great deal of attention due to their potential influence on hormone-sensitive cancers such as breast and prostate cancer. Cow´s milk contains phytoestrogens and the content varies according to the composition of the feed and the type and amount of legumes used. In this study we evaluated the proliferative effect of milk with different phytoestrogen content in human breast (MCF-7) and prostate cancer cells (PC-3). Innerhalb einer Kuh steigen die Einzelviertel unterschiedlich stark und weitgehend unabhängig voneinander in der Zellzahl an. In der Regel stehen erhöhte Zellzahlen mit einer Infektion in Verbindung. Beide Erkenntnisse sprechen gegen die Annahme, dass eine erhebliche und über die Beanstandungsgrenze hinausgehende Zellzahlerhöhung auf der Alp naturgegeben sein könnte. Die andere noch wichtigere Erkenntnis des Projekts ist die, dass es möglich ist, eine gute Milchqualität auf der Alp zu erzeugen. Auf den Kernprojektalpen liessen sich zu beanstandende Zellzahlen in rund 6% der Milchablieferungen feststellen, was in etwa dem gesamtschweizerischen Mittel entspricht. Reducing the amount of human-edible feed in livestock diets is a key factor towards more sustainable livestock systems. Based on results from a conventional wholesystem study comparing performance, efficiency, land productivity, and profitability of an indoor-feeding system (SH) and a pasture-based dairy production system (VW) in lowlands of Central Switzerland, the net contribution of these systems to human food protein and energy supply was analysed. Depending on the presumed human-edible fraction, the system VW produced between 6.6 and 11.2 times more human-edible protein and 3.5 to 6.6 times more human-edible energy via animal products than the animals consumed via feeds. In a whole-system study in lowland of Central Switzerland from 2007 - 2010 compared the performance, efficiency, land productivity and profitability of indoor-feeding (SH) dairy production with that of pasture-based feeding (VW) dairy production. In the present study these experimental results were economically evaluated under Austrian market und production conditions. Therefore conventional and organic model farms were created and analyzed using full cost accounting. In comparison to the barn feeding strategy a higher farm income, income per labor unit were achieved with the pasture-based feeding strategy. These economic differences were more pronounced under organic than conventional conditions.

STRUCTURE OF NITROGEN FRACTIONS ORGANIC AND CONVENTIONAL COW'S MILK Organic Eprints

Raw organic and conventional cow’s milk samples were analyzed for total nitrogen, non-protein nitrogen and milk urea content with the aim of evaluation of the different diets effect. Conventional milk contained higher level of total milk urea nitrogen as well as higher proportion in total nitrogen and non-protein nitrogen fraction. We detected that ratio of milk urea nitrogen to non-protein nitrogen is the most significant criterion for assessment of diet differences.

The Effects of Dairy Management on Milk Quality Characteristics Organic Eprints

The article focuses on the impact of different dairy management types on quality characteristics of organic and conventional milk. The study was conducted during 9 months (spring-autumn), raw milk samples were collected from organic and conventional dairy farms from two Ukrainian regions. The milk samples were analyzed for dry matter, total protein and non-protein nitrogen, ammonia content and values of stable isotopes 13С/12С were measured in fat and milk protein fractions. The impact of organic farming on mineral composition of cow milk Organic Eprints

Milk mineral matters are important in human nutrition, especially Ca, Mg and I. Increase of milk Mg along decrease of NPK soil fertilization under the Czech Republic (CR) conditions was predicted. This hypothetical prediction is based on antagonistic relationships between K fertilization, Mg level in cow roughage feeding and transfer of Mg into milk. In difference testing the conventional (C) cow milk was reference versus organic (O) milk. Holstein bulk milk samples (BMS) from winter and summer season in 4 C (n = 32 BMSs) and in 4 O (n = 16) herds were investigated. 6 herds were and 2 C were not grazed, other nutrition was typical under the CR conditions.
